Perfect and Easy-to-Make Poke Bowl

A perfect, healthy, and easy-to-make poke bowl!!

Ingredients for the base: 1 cup sticky rice, 2 cups water, 1 tablespoon rice vinegar, 1 teaspoon sugar, a pinch of salt.

For the chicken thigh: 250 grams chicken thigh cut into cubes, 4 tablespoons teriyaki sauce, 1 tablespoon sesame oil, 1 tablespoon soy sauce, 1 teaspoon crushed garlic, 1/4 teaspoon black pepper.

For the rest of the components: 1/2 cup cooked edamame, 1/2 cup pineapple cut into cubes, 1/2 cucumber cut into cubes, 1/2 sweet potato cut into small cubes, chopped green onion for garnish, toasted sesame seeds for garnish.

Prepare the rice: Rinse the sticky rice well in cold water until the water runs clear. Transfer the rice to a small pot and add the water, rice vinegar, sugar, and salt. Bring to a boil over medium heat, cover, and cook over low heat for about 15 minutes or until the liquid is absorbed and the rice is soft. Turn off the heat and let the rice cool slightly while covered.

Prepare the chicken: Heat the sesame oil in a large pan over medium heat. Add the chicken thigh cubes and fry until they change color. Add the teriyaki sauce, soy sauce, crushed garlic, and black pepper. Mix well and cook until the sauce reduces and the chicken is cooked through.

Assemble the poke bowl: Divide the sticky rice among individual bowls. Top with the fried chicken, edamame, pineapple, cucumber, and sweet potato. Garnish with green onion and sesame seeds. Finally add nori seaweed.
