Orange Lentil Soup Recipe - Hanukkah Challenge

An easy and simple orange lentil soup recipe.

Orange lentils are easy to digest and rich in protein and dietary fiber. Perfect to include in the menu for us and for our kids.

Ingredients: chopped onion, carrot grated on a grater, 4 crushed garlic cloves, tomato grated on a grater, 3/4 cup rinsed orange lentils, 1/2 teaspoon cumin, salt, pepper.

Fry the onion in a little oil until translucent. Add the carrot to the pot and cook for 5 minutes until slightly softened.

Add the garlic cloves (be careful they do not burn) and after a minute add the grated tomato. Mix.

Add water to just above the lentils (depending on the thickness you like) and cook until boiling.

After it boils, add the spices - cumin, salt, and pepper - and cook over low heat for another 20 minutes.

If you like, you can blend it a little with an immersion blender once the soup is ready.

A serving of soup is about 110 calories.
