Oat Pancakes Recipe
Oat, banana, and chocolate pancakes 🥞❤ Healthy | rich in protein | rich in dietary fiber.
Recipe (15 pieces - around 60 calories each): Grind 1 cup of oats in a blender (Ninja or similar) - I used gluten-free oats - until you get oat flour.
Add the rest of the ingredients to the blender: 4 tablespoons regular or spelt flour (optional), 1 banana, 150 grams Pro yogurt (regular yogurt also works), 2 eggs, 4 tablespoons ground almonds, 2 tablespoons sugar, 1 heaping teaspoon baking powder.
Blend for a few seconds until combined.
If you want (and I recommend it 😋), you can add 3 tablespoons of chopped dark chocolate or chocolate coins and mix by hand. (The batter is relatively thin, do not worry.)
Heat a pan and grease it lightly (you can use a paper towel). When the pan is hot, pour pancakes of the desired size, wait for bubbles to appear and the bottom side to brown a little, then flip for another three minutes.
My recommendation is to fry over low-medium heat; the batter is quite thin and this way your pancakes will come out prettier.
Add lots of maple syrup on top and enjoy. A healthy, balanced, and nutritious recipe. Enjoy 🥰
Benefits of oats: low glycemic value (great for diabetics); contains dietary fiber which keeps you full for longer, is good for the digestive system, and more; contains antioxidants; a good source of magnesium and B vitamins; lowers 'bad cholesterol' (LDL).
